During your stay, you can’t miss the opportunity to try Bouillabaisse, a soup made with several types of fish sometimes served whole. It closely resembles the famous Galician and Portuguese caldeirada and is Marseille’s most famous recipe.
As an appetizer you can order a Tapenade, which is a paste of crushed olives, black or green, seasoned with capers, anchovies and olive oil. Another appetizer you can taste is Panisses Fris, which are prepared with a chickpea flour and later fried.
Other similar dishes are Bourride, prepared with white fish such as whiting, stingray, or mullet, or Aïgo-Aau, a soup similar to Bouillabaisse that also includes white fish and is accompanied with potatoes and tomatoes.
Continuing with seafood, we find Poupeton, a fish-based souffle; Oursinade, made of sardines or sea urchins, or Aioli, a cod-based recipe with cooked legumes.
One recipe similar to Spanish scallops is Pieds et paquets with sheep tripe. Some of these dishes can be accompanied by Rouille, the standout sauce of Provence’s cuisine that is similar to mayonnaise and made with olive oil, breadcrumbs, garlic and paprika. And to finish off your meal, try the pastis, an anise-flavored spirit.
